one basic map, a large map with an interesting setup, and a builder (though I only added that for variance, not my type of game). But I can think of substitutes for every one of those

3 would probably make me leave too. But for the purposes of the question:
Feudal War - still the classic, I like Feudal Epic but Feudal War just hits the sweet spot.
Classic
Third Crusade - Unique combination of one way attacks, unusual bonuses, and different strategies make this a map that will take forever to master.
