I make a mean French Onion Pie, a delightful beef-and-ale pie, and a great corned beef pie.
I don't like sugary fruit pies much.

I have to say, they look a bit like scones. Brits certainly wouldn't use 'em to mop up gravy.
I have yet to try that.
US persons seem to use 'em where Brits might use Yorkshire Puddings - which (to continue the concatenation) are remarkably simlar to US "popovers".

They indeed are biscuits. All I did was google "biscuits" and that was about the second or third image that came up.

It's simply one of those US/UK vocabulary things. IN this case, the same word is used to describe different things. UK people are further confused because the thing that the word describes in the US does not exist in the UK.
I remember as a kid reading in a novel where a bloke used his biscuits to mop up his gravy. Naturally I was curious to try this and used a biscuit to mop up my gravy the next time we had some. Of course, to the trained US eye, I would have been using a cookie to mop up my gravy.
It was disgusting, and it wasn't until my first visit to the US that I discovered what the author had meant.

For a base, if you're not gonna make your own dough, I will usually use a flour tortilla. sprayed with a little oil. This comes up nice and crispy.
I still use a tomato sauce base. Make your own or buy a thick commercial one.
INto this I mix the things that make a pizza taste pizza-ish, and which most kids at least will claim they don't like: garlic, oregano, a little anchovy - all chopped up so small you won't see it. (Leave out the anchovy if you have any vegan diners. Add in a coupla drops of dark soy sauce to replace the saltiness)
Two cheeses next: a bit of mozzarella for that stringy texture, and a nice hard cheese that melts (my preferred is manchego, but that's a little hard to get here).
Fresh fruits on top of that. The fruits can vary, according to personal taste and availablility/season. They should be soft fruits that aren't too juicy (so the base doesn't go soggy). Peach/nectarine/apricot/plum are good choices, banana is essential, kiwi fruit goes well (not too much though). You can add a few rasberries, Blackberries, strawberries, blueberries, loganberries, or the like after cooking.

The pizza should be cooked until the base is crispy and the cheese melty.
Slice it up and serve it drizzled with a little runny honey, honey.

Incidentally, Apey, this is a great way to get kids cooking and trying new stuff.
Give them each a tortilla, or even better some fresh dough to stretch. Make up the red sauce in advance, and chop up the fruit. Then each can make their own special creation (most will opt to make a "face").
