Random map. Because I have actively played as many maps as possible as often as possible, and because I have spent a lot of time playing random maps, I strongly believe I will have a distinct advantage against the most players on any given random map, as opposed to any map in particular.

arms race because it's somewhat unique, plays well in the fog, and there are very different stages to the game, depending on how it plays out. first it's a race to get bonuses and just eliminate the opponent straight out. then, sometimes, it becomes a race to eliminate the opponent from your "strong country" while keeping at least one territory in the other. then, still other times, it's a race up the missiles, with the strategic/tactical decisions of bombarding and reloading to win the attrition battle (or claim the 50 troop bonus first).
Germany---because I've always liked how the center of the map is open (in the sense of there aren't any impassables, as they tend to be more on the perimeter).

Feudal war, just to kick Dj's ass and challenge him the ownage of those settings. That's basicly what got me hooked on this site

I've been playing a game on the Balkans map...and I think I like it. Maybe not for my usual 1vs1 setting, but overall I think I like the set up of the map with its bonus structures and movement around the map. It seems like a good Teams map.
