At first I was like WTF how does that work but when the arm showed up I figured it out...

there's some kind of IR sensor measuring the sand and a video projector projects the height map on top of it.

At first I thought there were some intricate scales all over the bottom of the table, but then the hand showed up, as you said...

All the same, very interesting.
