Samurai Champloo was good, but he might as well hunt down
Kenshin while he's at it. There are tons of others I can name that are worth watching (old and recent) :

Gunslinger Girl,
Crest/Banner of the Stars,
Full Metal Panic,
Claymore (currently airing), and a thousand other odds and ends depending on how well you tastes match my (rather eclectic) own.
