Because our sin has blinded us to continue to sin. Once you give into something once, it's much harder to say no to it later. Furthermore, we are not omniscient and can't always recognize that our choices in the present will lead to the wrong outcomes in the future. We are prideful beings who prefer to do things for ourselves rather than live by God's precepts. We were made to be similar to God in some aspect, but we were never made to be exactly like God, which is what you're mixing up here.
